Restaurant 3 Fonteinen
In a small town, appropriately named Beersel, 3 Fonteinen strives for both excellence and tradition.  With an incredible Bier Cuisine restaurant and a Lambic brewery right next door, the painter also makes his paints.  After talking to our friends Roger and Claudia about how amazing this place is, we find ourselves rather excited to be here.    We arrive just before lunch on a cool Sunday morning to start with a tour of this traditional Lambic brewery.  As we are seated, the local church service ends, filling the restaurant with young and old.  I was humbled as I looked at the table next to us; two elderly couples toasting with the house Lambic, the sound of glass tapping glass and warm smiles as the sip this aged nectar.  When have you seen that in the US?

The Gang
When you order Kriek, you have two options.  First being a straight Kriek, tart from the Lambic that is the base beer aged with cherries.  Or second, the same Kriek, but mixed with a sweetened water, to help cut some of the sourness.  This syurp brings out some of the almond flavors of the cherry pits as well as making this beverage more approachable.
The meal is everything I’ve heard from friends and researched myself.  The flavors of the Rabbit aren’t masked by the Gueze, but heightened by it, bringing a light sweetness to the dish, balancing the dish with both sweet and sour. 

It is a treat to find Guinea Fowl on the menu.  The taste is similar to the mixing of pheasant and turkey, resulting in a delicious dish, specially paired with a Kriek sauce. 

As I write this, I am taken back to a meal the warmed my soul.  I look forward to my next trip to Brussels.
